The restaurant formerly known as Quito’s will soon reopen with a new name, ownership group, and a menu focusing on New England coastal fare with an East Bay twist.
Q’s Waterfront by O.M.G., led by hospitality professionals Frank Martucci, Adam “Opie” Oppenheimer, and Anthony Guaetta, will open once their state and local licenses are in order, later this fall.
The partners bring more than seven decades of combined experience in culinary operations, restaurant development, food and beverage programming, hospitality, training and guest service.
“Our goal is to respect the history and connection this location has with Bristol while creating something new for the community,” said Martucci, a Bristol resident. “Q’s will be dedicated to great food, creative beverages, genuine hospitality and being an active part of the community.”
Martucci is an award-winning food and beverage executive with more than 25 years of hospitality leadership experience. As Corporate Director of Food, Beverage & Nightlife for Bally’s Corporation, he helped oversee 112 food and beverage outlets across 14 properties and was involved in the development of more than 50 restaurant and bar concepts.
Guaetta, a Johnson & Wales University Culinary Arts graduate, brings more than two decades of culinary and beverage experience throughout New England. His background includes restaurant operations, menu development, beverage programming and training, including serving as Lead Beverage Trainer at Bally’s Lincoln.
Oppenheimer is an award-winning bartender, hospitality leader, trainer, consultant and operator with more than 25 years of New England hospitality experience. He has developed training programs, seasonal menus and bar operations while mentoring hospitality professionals throughout his career.
Together, the partners plan to create a modern New England waterfront dining experience featuring a seafood-forward menu, quality ingredients and a broad selection of non-seafood offerings, complemented by a creative beverage program.
“Food and beverage should complement each other,” said Guaetta. “We want the menu to reflect the spirit of the New England waterfront while offering guests plenty of reasons to return.”
A focus on community
Community involvement and charitable giving will also be part of Q’s identity. The partners have longstanding experience supporting charitable initiatives and hospitality professionals.
Martucci is co-founder of Project Broken Wheel Foundation, a Rhode Island nonprofit that has refurbished and donated more than 1,500 bicycles to children, families, veterans and charitable organizations. He also previously served as president of the USBG National Charity Foundation helping develop and support charitable assistance, health and wellness programming and emergency relief for hospitality peers nationwide.
Oppenheimer organized Flip Out On Cancer, an annual local flair-bartending charity event that has raised more than $100,000 for organizations including The Tomorrow Fund, American Cancer Society and Helen David Relief Fund. Guaetta has also helped produce the initiative.
“We want Q’s to be more than a place to eat and drink,” said Oppenheimer. “Our vision is to create a place where everyone feels welcome, where all of our staff can truly thrive and where we can find meaningful ways to give back to the Bristol community.”
The partners are refreshing the restaurant, as well as winterizing the outdoor patio in preparation for opening.
