From ocean water to the kitchen table — this is how you make sea salt
1. Matthew Mullins collects sea water from the Brenton Reef area and filters it through a graduated filter system before transporting it to this kitchen space at Hope & Mai

2. Large kettles at Hope & Main are used to boil the water and reduce it.
3. Once boiled, the water is transferred to large basins, where it is allowed to slowly and calmly evaporate.
4. Salt flakes are scooped up and transferred to large colanders.
5. The flakes are left to rest in the colanders until they dry.
6. In the final step, the dried flakes are transferred to jars and sealed.
