Barrington woman wins Cookie Smackdown

A local woman’s passion for baking has blossomed into an award-winning treat.

Barrington resident Katrin Schnippering was recently awarded first prize in RI Food Fight’s Spectacular Cookie Smackdown. RI Food Fights is a collection of friendly food competitions touching on a variety of different food categories.

Ms. Schippering’s winning entry was a cookie modeled after Psy, the pop star who’s Gangham Style music video has become an international internet sensation.

But cookie making is far from a new endeavor for Ms. Schnippering, who moved to Barrington eight years from Switzerland. She said cooking up everything from cupcakes to cookies has always been a hobby though it has recently become more of a business.

Ms. Schnippering said the process began about a year and a half ago. She started baking cookies for friends and before long, friends of those friends came calling. Within the last year, Ms. Schnippering said she started hearing from complete strangers looking for her cookies.

“I was always a good cooker and a baker … And I really like to eat,” she said.

So Ms. Schnippering contacted the Sweet Shoppe, on Waseca Avenue, where she now rents space one day a week. Customers can find her cookies on display at the Sweet Shoppe.

Ms. Schnippering said the inspiration behind her culinary art comes from a variety of sources. There was her friend, for example, who wanted a batch of cookies for a family member who had recently undergone open heart surgery. Ms. Schnippering obliged, providing a batch of red cookies shaped like the body’s most important muscular organ.

Ms. Schnippering bakes her treats under the moniker of Eye Cookies, which she said was suggested by a friend.

Ms. Schnippering also said it was surprising to be invited to the Cookie Smackdown, let alone win it.

“That was really nice,” she said.

“Never in my wildest dreams did I think I had a chance to win.”

Going forward, Ms. Schnippering said she hopes to sell her cookies in larger quantities to companies and even open her own bakery.
