New butcher shop opens in Barrington

Owners offer quality meats, cheeses, and cooking tips

The Barrington Butchery opened its doors last week.

The new butcher shop, which is located in the space previously filled by Persimmon Provision in the Prince's Hill plaza on County Road, offers a wide variety of meats and cheeses. 

On Friday, the main case was filled with thick steaks, whole roasting chickens, links of italian sausage, pork tenderloins, custom blended hamburg, and much more. A second case offered an assortment of cheeses. 

Barrington Butchery is owned by Michael McKeever and his father-in-law Lawrence Russolino.

Mr. McKeever has been a meat cutter for many years. He grew up in his family-owned IGA in Warwick and learned the trade from a professional butcher at the store. 

Mr. McKeever said he has long had the dream of opening his own butcher shop, but that dream grew closer to reality this past Christmas. While gathering for a meal, Mr. McKeever cooked a beautiful rib roast. The dish drew rave reviews and before long, Mr. McKeever and Mr. Russolino were discussing the idea of opening their own store. 

Mr. Russolino, who is a graduate of the first culinary class at Johnson & Wales University, said he had read an article about Persimmon Provision closing its doors, so he picked up the phone and called its owner. Before long the two had worked out an agreement. 

Mr. McKeever and Mr. Russolino moved into the space in early March and greeted their first customer last week. 

"I'm very excited about this. This has been my dream," said Mr. McKeever.

Mr. McKeever hand selects all the products at the shop, and makes his own hamburger blend from cuts of rib-eyes, brisket and short ribs. The store also carries a variety of cheeses from Narragansett Creamery, and pre-packaged items as well. 

Mr. McKeever said he will be at the shop each day to offer meal ideas and cooking tips. Mr. Russolino also prints out copies of his favorite recipes and places them out the checkout counter. 

Mr. McKeever said Barrington Butchery is not just a place for people to buy meats for holidays and other special events. He hopes people make it an everyday stop on their way home from work. 

Mr. Russolino added: “I am excited about meeting our customers and getting to know them, and about what we can provide for them."
